I actually cheated and used a box mix and jazzed it up with peppermint extract and mini chocolate chips. I bake them in a pan with square cups. I cheated again and used pre-made frosting but seriously I can never be as good as Pillsbury chocolate fudge frosting. Added a junior mint and some more mini chocolate chips to the top and tada!</content>

    <content type="html">Jayna's baby shower was yesterday and she had me make her Mint Chocolate Chip cupcakes. The cupcake recipe was from Crazy About Cupcakes and I thought they were a TAD too dry - some more milk would have fixed that. The frosting recipe was from 500 Cupcakes.&lt;br /&gt;&lt;a href="http://pics.livejournal.com/mybabycakes/pic/000055wk/"&gt;&lt;img width="320" height="240" border="0" alt="" src="http://pics.livejournal.com/mybabycakes/pic/000055wk/s320x240" /&gt;&lt;/a&gt;&lt;a href="http://pics.livejournal.com/mybabycakes/pic/00006784/"&gt;&lt;img width="320" height="240" border="0" alt="" src="http://pics.livejournal.com/mybabycakes/pic/00006784/s320x240" /&gt;&lt;/a&gt; &lt;a href="http://pics.livejournal.com/mybabycakes/pic/00007grb/"&gt;&lt;img width="320" height="240" border="0" alt="" src="http://pics.livejournal.com/mybabycakes/pic/00007grb/s320x240" /&gt;&lt;/a&gt;&lt;br /&gt;ALSO, the recipe only made 16 (one of which I tested at home). Now the recipes don't TELL you how much they make and the last recipe I made out of this book made TWO DOZEN so I was expecting this recipe too also. So mot having enough was irritating.</content>

    <content type="html">So at one point in time, Alysha told me she wanted black licorice cupcakes. GROSS. But since it was her birthday yesterday I thought it only apporpiate to make some kind of gross cupcake for her. Whilst making them the dough ended up looking like I was mixing cement, mmmm.&lt;br /&gt;&lt;a href="http://pics.livejournal.com/mybabycakes/pic/0000226w/"&gt;&lt;img width="320" height="240" border="0" alt="" src="http://pics.livejournal.com/mybabycakes/pic/0000226w/s320x240" /&gt;&lt;/a&gt;&lt;br /&gt;After baking these grey cupcakes, the delicious golden color that most cupcakes get made them GREEN!&lt;br /&gt;&lt;a href="http://pics.livejournal.com/mybabycakes/pic/00003zds/"&gt;&lt;img width="320" height="240" border="0" alt="" src="http://pics.livejournal.com/mybabycakes/pic/00003zds/s320x240" /&gt;&lt;/a&gt;&lt;br /&gt;Instead of making a licorice frosting (since the cupcakes called for FOUR TABLESPOON of anise, and I only had 3) I made vanilla and decorated with Good and Plenties.&lt;br /&gt;&lt;a href="http://pics.livejournal.com/mybabycakes/pic/0000459z/"&gt;&lt;img width="320" height="240" border="0" alt="" src="http://pics.livejournal.com/mybabycakes/pic/0000459z/s320x240" /&gt;&lt;/a&gt;&lt;br /&gt;&lt;br /&gt;Both the frosting and the cupcakes were homemade and the recipes are in the book Crazy About Cupcakes.</content>

    <content type="html">Every time&amp;nbsp;I have made a baking or cooking journal, it NEVER lasts. I think it's because no one is reading it at all. If just one person looks at&amp;nbsp;this (which shouldn't be a probably because all my friends have livejournals) then it will make more of an incentive to write in it.&lt;br /&gt;&lt;br /&gt;Anyways, my name is Rachel.&amp;nbsp;If I had enough time, money and people to eat them then I would make cupcakes every day of my life. But I&amp;nbsp;don't. But what I&amp;nbsp;do make I want to&amp;nbsp;keep track of/show off. Naturally.&amp;nbsp;</content>
